Well since so many of you can't make it to South Berwick tonight for the Women's Art Show I'm bringing it to you. In a last minute pinch (i.e. sore neck) I didn't get as much sewing done as I'd like. SO when all fails sell food! My sister Rebecca had some extra brown coffee bags and I thought......hmmmmmmmmm Caramel Corn! Here is the recipe, it's fun and wicked easy.
Giddy Up Caramel Corn
6 quarts of popped corn (I know weird measurement)
2 cup brown sugar
1/2 cup karo syrup
dash of salt
2 sticks butter
1 teaspoon vanilla
1/2 teaspoon baking soda
Bring sugars and butter and salt to a boil, add the soda and vanilla, it bubbles, pour over popped corn, try to stir and bake on 250 for an 1 hour. You have to move it around a bit while baking. I'm adding pecans for the "Giddy Up" part.
Update: Most of you have been asking how many kernals it takes to make 6 qts. I found if I used my favorite soup/stew pot, covered the bottom with oil and used 3/4-1cup of kernals that makes about the right amount. I like mine to be well covered with the gooey stuff.
